I made these last night and they were just okay as written. I dipped the warm muffins in the butter and cinnamon sugar as directed but I didn’t care for the results. I made a second batch and put a simple streusel topping on before baking and they were delicious. The muffins themselves were very good last night but today (the leftovers) are very dry. I would like to continue to use this recipe as my guide for apple cinnamon muffins but I will experiment with the addition of another ingredient to try to make them a bit moister. My sister recommended trying some applesauce or maybe a vegetable shortening to replace some of the butter. I will report back. These were amazing! I doubled the recipe and added just a little extra flour since I prefer my batter a little thicker. I didn’t have any problems with the cinnamon mixture oozing out, it kind of sunk into the pancake during cooking. All three of my kids asked for seconds and we had a friend over who ate more than anyone. We had no leftovers. I’ll definitely make again (in larger quantities). These are good. They have a texture similar to cake donuts and really scratch that baked goods itch. I added 1/8 tsp ground nutmeg to see if I could get these to taste like my grandma’s donuts and they had a similar flavor. I used melted butter instead of coconut oil on top. Next time I am going to experiment with adding a couple Tbs of ground golden flaxseed. I will share tonight’s batch with a diabetic friend who doesn’t get many sweets and will be able to enjoy a couple donut bites without breaking his carb bank. I will be making these again. I have made this recipe like 4 times already and shared it on Facebook. Love it! Each time I make it friends, co workers and others (Whoever gets one) is amazed at how good it tastes. I made a lot of my classmates love me lol and my teacher. Made this recipe today and all I can say is WOW! So gooey and delicious. Dough came out so soft and the icing wasn’t too sweet or overpowered by the cream cheese. Only difference I made was adding a little bit of milk to the icing mixture to get it a bit more on the runny side so it was easier to spoon over the rolls. I think the game changer was using the bread flour instead of regular flour. Worth the trip to the store if you don’t have any.
